A Vermont Natural Beef side is one half of a single head of cattle. The weight for a side typically weighs 280lbs. with a range of 240-350 lbs. A quarter, is just that, a quarter of one single head of cattle and weighs in at an average of 140lbs. and a range between 120-175lbs. A Standard Cut side or quarter of beef will consist of the following cuts:

What Is Hanging Weight?
This is often the first question we receive about ordering our amazing grass-fed beef. Hanging weight is the weight of the animal side before it is processed into specific cuts. This amount is typically more than you will take home, depending on what you elect to receive. To maximize the weight you take home feel free to order dog bones and organ meat which would normally be discarded. This loss can equate take home weight being up to 2/3 of the hanging weight.
